Axiom Pumpkin and Umbral Onion & Goat Cheese Puff Pastry - Lords of The Fallen Inspired Recipe
Equipment
- Standard sized muffin sheet
- Flat baking sheet
- Pan
- parchment paper
Ingredients
Pastry
- 3 pre-made puff pastry sheets we only used 2.5 sheets though
Pumpkin Pie Filling
- 1 15 oz can pumpkin puree
- 1 14 oz can condensed milk
- 2 tsp pumpkin pie spice
- 1 tsp vanilla extract
- ½ tsp almond extract
- 2 eggs
- ½ tsp salt
- caramel drizzle we used store-bought
- whipped cream
Onion Filling
- 5 medium yellow onions sliced
- 4 tbsp butter
- salt
- 5 pieces thick cut bacon
- 4 oz goat cheese
Instructions
Onion Filling
- Heat the oven to 400F (205C), line the flat baking sheet with parchment paper and lay the bacon on top.
- Bake the bacon until just a bit before your desired crispiness, about 10-20 minutes.
- While the bacon is baking, heat the butter in a pan over medium heat until melted, then over the course of a few minutes add the onions in batches
- Reduce the heat to medium-low and let caramelize over the course of about 30 minutes, stirring every 5 minutes, until they're softened to your liking.
- Add salt to the onions to taste
- Crumble the bacon into bits and set them aside with your onion filling
Pumpkin Filling
- Mix all the pumpkin filling ingredients together (besides the caramel drizzle and whipped cream), set aside
Baking
- Preheat the oven to 325F (160C)
- Spray the muffin tin with non-stick spray
- Cut each puff pastry sheet into 12 equal slices, lay into muffin cups of baking sheet making sure to cover the whole cup.
- Press filling into tin, filling about 2/3rds of each muffin cup. This was about 2 tbsp of pumpkin filling per cup, and 1.5 tbsp of onions plus a layer of bacon bits on top, for us. This made about 18 pumpkin ones and 12 onion ones, with a little leftover pastry that went unused.
- Bake at 325F (160C) for 30 minutes, until pumpkin is no longer liquid and puff pastry is a golden brown
- Top the pumpkin pastries with whipped cream and caramel drizzle, and the onion bacon ones with some crumbles of goat cheese, prior to serving.
