Ingredients

  • 9 eggs
  • ¼ cup grated parmesan
  • cup total of chopped parsley, basil, chives, and rosemary, or herbs of choice
  • 3 jalapenos chopped, seeds removed
  • ½ tsp salt
  • ground black pepper
  • 2 tbsp extra-virgin olive oil
  • 1 yellow onion finely chopped
  • 5 ounces Gouda cheese or creamy topping cheese of choice

Notes

This recipe is damn good. The parmesan and onions baked into the egg give it this incredible warm, buttery flavor that can't be beat. We added the de-seeded jalapenos as a modification to the recipe and it gave an extremely small touch of heat, we may even recommend you add more if you want the taste to be prevalent.
This dish is great on its own, but we served it with a pumpkin pie spiced yam puree which really drove home the cozy fall vibes. Leftovers are great on their own, with hash browns, or on a bagel for a quick breakfast sandwich.
