Equipment

  • Pressure Cooker

Ingredients

Meatballs:

  • 1 lb ground beef or half and half beef and pork
  • 1 tsp salt
  • ¼ tsp black pepper
  • ¼ tsp ground cinnamon
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 egg
  • 1.5 tbsp olive oil

Sauce:

  • ½ cup barbecue sauce
  • ¼ cup ketchup
  • ½ cup water
  • A few drops your favorite hot sauce
  • 1 tbsp honey

Garnish:

  • 2 sprigs green onion chopped thinly
  • Coarse salt

Instructions

  • Mix all the meatballs ingredients together and scoop into ping pong sized balls.
  • Saute the meatballs over your cooking fire, or using the saute setting on your pressure cooker, in oil until they are just browned on each side. We aren't looking to fully cook them yet, just sear the outside.
  • Dump all the sauce ingredients into the pot and stir, then close the lid and lock it into the sealing position. Pressure cook at regular settings for 5 minutes.
  • Vent the pressure, open the lid, and keep the cooker on the Keep Warm setting for the duration of the party! Serve with plates, toothpicks or utensils, and a serving ladle so adventurers get plenty of sauce. Have the garnish set out for people to use to their taste.

Notes

This is a super simple meatball recipe that is great to prep just before your next party or DnD session. Get the cooking done just before everybody arrives and then the keep warm setting will keep these meatballs toasty for the duration of your time together. You can reduce the calories by using leaner meat and low sugar sauces!
