Loaded Tavern Fries

Crispy fries covered in layers of bacon, fried onions, mushrooms, and cheese sauce. An absolutely delicious meal for serving during a DnD adventure!

Ingredients

Fries

  • 4 large baking potatoes
  • 3 tbsp olive oil
  • 1 tbsp salt
  • 1 tbsp pepper
  • 2 tsp garlic powder

Layers

  • ½ lb bacon
  • 1 yellow onion chopped
  • 1 tsp salt
  • 8 oz white mushrooms sliced
  • ¼ cup sour cream
  • 4 green onions chopped

Cheese Sauce

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1 cup cheddar cheese shredded
  • ½ cup parmesan cheese shredded
  • 1 tbsp garlic powder

Instructions

  • Cut your washed potatoes into your desired fries size and soak in cold water for 30 minutes. Remove from the water and thoroughly dry them.
  • Preheat the cooking hearth or oven to 375°F (190°C). Toss the potatoes with the oil, salt, and pepper and spread them on a single layer on a baking sheet or large (warmed) cast iron skillet.
  • Bake for 20 minutes, then raise the heat to 425°F (220°C) and cook for another 20 minutes, or until they are golden brown.
  • While the fries are baking for the final 20 minutes, fry your bacon and let them sit on a paper towel when done. Fry your onions in the bacon grease, tossing in the salt. Remove into a separate bowl then fry your mushrooms.
  • In a saucepan over a medium heat cooking fire or stove, melt the butter and then whisk in the flour and garlic slowly. Slowly add the milk and continue to stir until the mixture thickens in about 5 minutes.
  • Remove the butter mixture from the fire and stir in your salt, pepper, and cheeses until they completely melt.
  • When the fries are done, layer the cheese, onions, mushrooms, crumbled bacon, green onions, and sour cream onto the dish.
  • Serve to the hungriest of adventurers for a filling meal!

Notes

This was one of our tastiest dishes ever. Making your own fries instead of buying store-bought really lowers the calories to this filling dish. The cheese is so hearty and warm, and this recipe is really open to any sort of variation you'd be interested in. Try it with some barbecue pulled pork on top, or some spicy sauce! We love this recipe for serving to a big Dungeons and Dragons group before a session!
