Ingredients

  • 3 whole Leeks thoroughly cleaned, white and light green parts thinly sliced
  • 3 stalks Celery chopped
  • Bacon as much as you'd like, our party wanted 2 strips each (and that's what was used in the calories calculation)
  • 2 tsp Fresh Thyme
  • 2 pounds Russet Potatoes peeled and diced
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • Salt and Pepper to taste

Firstly, our Nutribullet blender is definitely a rather dangerous tool for a hot recipe like this. The expanding gases of the hot food being blended made the lid nearly explode off when unscrewing. We definitely advise using a full sized, loosely capped blender, or an immersion blender.
The recipe calls for just a handful of bacon strips but we at the Everhearth Inn believe the only good strip of bacon is one you're chewing, so each adventurer got 2 strips with their serving.
Lastly, this soup is very similar to really good mashed potatoes, and thus pairs well with any typical mashed potato topping. Sour cream, cheese, more bacon, chives, and even a dash of some barbecue sauce or ketchup. It's a really versatile recipe that can stand on its own or compliment something greater.
