Broccoli Brie Soup - Fantasy/Videogame Inspired Cooking

This delicious, cheesy broccoli soup recipe is perfect to serve on a chilly fall evening.

Ingredients

  • 2 tbsp olive oil extra virgin preferred
  • 3 tbsp salted butter
  • 1 medium yellow onion chopped
  • 2 medium carrots chopped
  • 2 medium zucchini chopped
  • 3 heads broccoli about 4 cups chopped
  • 2 tbsp fresh thyme
  • ¼ tsp ground nutmeg
  • ¼ tsp cayenne
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 3 cups veggie broth
  • 2 bay leaves
  • 1 cup + 2 tbsp whole milk
  • 1 ¾ cups shredded cheddar cheese
  • 7 oz brie rind removed

Instructions

  • Set the Instant Pot to "sauté" mode. Once the Instant Pot has heated, add the olive oil, butter, and chopped onion. Cook until fragrant, stirring to ensure the onion doesn't stick. This will take 3-5 minutes.
  • Add the chopped carrots, zucchini, broccoli, thyme, nutmeg, cayenne, garlic powder, bay leaves, salt, and pepper. Pour in the broth and stir the mixture.
  • Put the lid on the Instant Pot. Manually set the Instant Pot to cook on high pressure for 8 minutes. Ensure the pressure valve is closed.
  • Once the Instant Pot has completed cooking, release the pressure using the valve at the top. I hold a towel a few inches away from the steam to catch the moisture, while not blocking the valve.
  • Remove the bay leaves. Use your immersion blender to blend up the soup until its mostly smooth, but still has a bit of chunks in it. If you don't have an immersion blender, a regular blender will work fine as long as there is an opening for the steam to escape.
  • After blending, set the Instant Pot to "sauté" mode. Add the cheese to the soup (rind removed on the brie) and stir until the cheese has fully melted, about 5 minutes.
  • Serve the soup garnished with a sprinkle of the shredded cheddar and the fresh thyme

Notes

This was a delicious cheesy soup recipe, perfect to serve on a chilly fall evening. Some possible improvements to the dish could be using fresh garlic, and maybe a bit more cayenne. Even without those changes, this was a very flavorful soup recipe and I felt like I had stopped in a tavern to order a hearty soup and some ale. Hope you all enjoy the recipe 🙂
