Halfling Melted Cheeses with Chunky Tomato Broth

Halflings love food almost as much as napping under a willow tree. When they're not tending to their peaceful fields, they're tending to their growling stomachs and this recipe gets the job done every time.

  • 2 tbsp salted butter
  • 1 large onion
  • 1 bay leaf
  • salt and pepper
  • 1 tbsp brown sugar
  • 1 tbsp tomato paste
  • 4 cups chicken broth
  • 2 tbsp long grain white rice
  • 28 oz can peeled whole tomatoes
  • black pepper
  • 6 tbsp butter softened
  • 8 slices white or multigrain French, Italian, or sandwich bread
  • 8 oz firm or semifirm cheese, coarsely grated
  • tbsp chopped fresh parsley, dill, or chives for garnish

This recipe is what it seems to be, really nice tomato soup and grilled cheese. We went with gouda for our cheese and absolutely loved it. The hearty amount of butter used on the outside of the French bread made for a wonderful crunch giving way to a gooey inside.
If we were to do it again, we'd go an extra mile to spice up the tomato soup. It's very good as is, but rather basic. I would perhaps mix in some mushrooms and onions, and maybe a bit of hot sauce. And then I would garnish with a dash of oregano to give it a slight Italian taste.
