Gurdats Stuffed Mushrooms

Ingredients

  • 4 tbsp extra-virgin olive oil
  • ½ tsp lemon juice
  • salt and pepper
  • 20 large cremini or white button mushrooms stems removed and finely chopped, caps left whole
  • 5 garlic cloves
  • cup breadcrumbs
  • 4 jalapenos seeds removed
  • 1 shallot minced
  • ½ cup fresh parsley finely chopped
  • tsp fresh thyme minced
  • ¼ cup dry sherry
  • ¾ cup Peppadew peppers finely chopped, see notes
  • ¾ cup parmesan cheese coarsely grated
  • 3 tbsp cream cheese

Notes

This recipe is a nice and tasty small snack for every adventurer. The Peppadew peppers that were called for were tricky to find in time for when we wanted to cook so we substituted sweet cherry peppers and they were great. The minced mushroom stems as a side were something we've never tried before but absolutely loved! This recipe is fairly involved and has many steps in and out of the oven so be prepared for some effort for these cheesy bites!
