Innkeeper's Fondue and Dipping Assortment - DnD Inspired Cooking

A creamy, delicious, boozy fondue that we make for adventurers as well the things we like to dip in it!

Ingredients

  • 2 tbsp oil we used truffle
  • ¾ pound Emmentaler cheese grated
  • ¾ pound Gruyère cheese grated
  • 1 ⅓ tbsp cornstarch
  • 1 cup dry white wine
  • 1 tsp lemon juice
  • ½ tbsp brandy
  • ½ tbsp maraschino cherry juice
  • Black pepper to taste
  • 1 tsp nutmeg
  • tbsp garlic powder
  • 1 tsp cayenne powder optional

Dipping Items

  • Day-old bread
  • Pear
  • Apple
  • Salami
  • Fried potatoes
  • Broccoli
  • Mushrooms

Instructions

  • Rub a warmed pot down with your oil. We chose truffle to impart some of that flavor into the cheese but anything will work.
  • In a pot over a cooking fire (or stove) of medium heat, slowly introduce the cheese in ½ cup increments, waiting about 30 seconds in between increments. Then add the wine, cornstarch, and lemon juice and stir occasionally until the cheese starts to melt. This step should take around 5 minutes.
  • Reduce your cooking fire or stove to low, then add in the brandy, cherry juice, and spices.
  • Stir gently until fully melted and smooth, about 3 minutes. Promptly remove from heat.
  • Lay the pot of cheese out near various dipping snacks and enjoy a hearty appetizer, or meal, before your next Dungeons and Dragons adventure!

Notes

This fondue is quick to make and requires minimal prep. You practically just grate and melt! Fondue is such a fun way to eat, and tastes incredible too. Our recipe is a slightly boozy take on fondue, true to our innkeeper roots, but you can always adjust to your tastes. Feel free to dip whatever you can think of in and experiment with the flavors!
