Equipment

  • 1 Large cooking pot

Ingredients

  • 2 tbsp olive oil
  • 13 oz andouille sausage links sliced into medallions
  • 2 jalapeno peppers seeds removed and thinly sliced
  • 6 oz white mushrooms cleaned and thinly sliced
  • 1 orange bell pepper stemmed, seeds removed and thinly sliced
  • 4 large cloves garlic minced
  • 12 oz penne pasta
  • ½ cup diced fire-roasted tomatoes
  • 3 ½ cups chicken broth
  • 2 tbsp Cajun seasoning store-bought or make your own with a few dashes each of paprika, salt, garlic powder, ground black pepper, ground white pepper, onion powder, dried oregano, cayenne, and thyme
  • 8 oz cream cheese cut into 4 chunks
  • 3 tbsp red pepper flakes
  • 1 cup cheese we used Drunken Goat

Instructions

  • Pour the olive oil into your cooking pot over a medium heat cooking fire or stove. After the oil has warmed, add in your sausage and sear on both sides for 4 minutes. Set aside on a paper plate.
  • Keep your sausage oil in the pot and add in your jalapenos, mushrooms, bell pepper, and garlic. Cook for 3 minutes, stirring.
  • Add the pasta, tomatoes, broth, and cajun seasoning. Stir well and then cover until it begins to boil.
  • Turn the heat down to low-medium and simmer for about 15 minutes, stirring a few times, until the pasta is al dente.
  • Add all the cream cheese, chunk by chunk, stirring between chunks. Once the cheese is melted throw in the sausage, and stir.
  • Top with a heart pinch of cheese and red pepper flakes and serve to hungry adventurers!

Notes

This turned out incredible! One of our favorite recipes we've made. The cream cheese balances the spiciness so well and it ended up so hearty and tasty. This is a fantastic dish to serve for your next Dungeons and Dragons session this fall!

Holy crap, this dish is delicious! A small kick paired with soft creaminess, an absolutely tavernesque dish. If you are a spice lover, I would recommend either adding more peppers/spice or less cream cheese, but I think it’s a perfect balance for those who enjoy the lower spice levels. Makes for wonderful leftovers as well.
