Ingredients

  • 3 medium eggplants
  • olive oil
  • 2 cloves of garlic peeled and minced
  • 2 tbsp tahini
  • ½ tsp chilli powder
  • 1 tsp cumin
  • lemons
  • 1 tsp salt
  • 1 tsp pepper
  • carrot chips optional

Instructions

  • Preheat your oven to 350°F (180°C).
  • Cut your eggplants in half lengthwise then score the flesh in a crisscross pattern. Don't cut the skins as you score.
  • Rub in a hearty pour of olive oil into the flesh then arrange on a baking sheet flesh side up.
  • Bake for 45 minutes or until soft.
  • Put the garlic, tahini, chili powder, cumin, 2 tbsp of olive oil, juice of the lemons and the eggplant (skin discarded) into a food processor and give it a quick blend until you get a nice thick dip.
  • Serve with our suggested carrot chips, or really anything. Veggies, chips, pita, spread it on sandwiches. And then get back to adventuring!

Notes

This is such a quick recipe that's fantastic for meal prepping healthy dishes for the week! Because of the low effort and long baking time it's a great dish to get started and then cook another dish while you wait. It's a great and versatile dip and functions similarly to hummus. Chloe is allergic to chickpeas so this is a great alternative and tastes phenomenal! It's light on calories but fills you up, a great healthy dish for you to have on your next Dungeons and Dragons or fantasy role playing game adventure!
