This easy, healthy dip is similar to hummus (except using eggplants instead of chickpeas) and is a versatile dip great for pita, chips, and veggies to be shared at your Dungeons and Dragons game!

3medium eggplants
olive oil
2clovesof garlicpeeled and minced
2tbsptahini
½tspchilli powder
1tspcumin
1½lemons
1tspsalt

Instructions
Preheat your oven to 350°F (180°C).
Cut your eggplants in half lengthwise then score the flesh in a crisscross pattern. Don't cut the skins as you score.
Rub in a hearty pour of olive oil into the flesh then arrange on a baking sheet flesh side up.
Bake for 45 minutes or until soft.
Put the garlic, tahini, chili powder, cumin, 2 tbsp of olive oil, juice of the lemons and the eggplant (skin discarded) into a food processor and give it a quick blend until you get a nice thick dip.
Serve with our suggested carrot chips, or really anything. Veggies, chips, pita, spread it on sandwiches. And then get back to adventuring!

This is such a quick recipe that's fantastic for meal prepping healthy dishes for the week! Because of the low effort and long baking time it's a great dish to get started and then cook another dish while you wait. It's a great and versatile dip and functions similarly to hummus. Chloe is allergic to chickpeas so this is a great alternative and tastes phenomenal!
