Chocolate Cranberry Travel Bites
Equipment
- food processor
- Baking sheet
- parchment paper
Ingredients
Dry Ingredients
- 2 cups quick-cooking oats
- 1 ⅓ cup sliced raw almonds
- ⅔ cup 70-85% dark chocolate chopped into small pieces
- ½ cup dried cranberries look for a brand that doesn't add a lot of sugar, preferably none
- 1 tsp ground ceylon cinnamon regular cinnamon is fine but ceylon is just a bit healthier
- ½ to ¾ tsp salt to taste
Wet Ingredients
- 1 cup creamy unsalted almond butter or peanut butter
- 1 ½ tsp vanilla extract
- ½ cup honey or lite maple syrup to reduce calories
Instructions
- Pour your dry ingredients into a bowl and combine well.
- Pour your wet ingredients into a microwaveable bowl and combine well. If the nut butter is too thick you can microwave it for 10 seconds at a time to soften it. Let it cool back to room temperature before moving to the next step, otherwise the chocolate will melt.
- Combine the wet and dry ingredients, mixing well.
- Lay parchment paper onto your baking sheet. Spoon roughly golf ball sized bites in a grid onto your baking sheet, adjusting their size so you have around 20 balls. Squish each ball slightly to make a somewhat-cylindrical shape.
- Cover the sheet with plastic wrap or more parchment paper and refrigerate for on hour or longer.
- Serve to your Dungeons and Dragons table during their next day of travel!
