This recipe is part of our new series of “Tavern food made healthy”, an initiative we’re taking to make fantasy foods come to life in a way that aligns with your health goals. Each recipe will take rustic foods, make some easy tweaks to improve their nutrition, and focus on flavor that any adventurer could be excited by. This recipe was done in partnership with Tank Tolman, an amazing fantasy-inspired fitness creator that we’ve been fans of for a long time. Equipment
- food processor
- Baking sheet
Ingredients
- 3 medium eggplants
- olive oil
- 2 cloves of garlic peeled and minced
- 2 tbsp tahini
- ½ tsp chilli powder
- 1 tsp cumin
- 1½ lemons
- 1 tsp salt
- 1 tsp pepper
- carrot chips optional
Instructions
- Preheat your oven to 350°F (180°C).
- Cut your eggplants in half lengthwise then score the flesh in a crisscross pattern. Don't cut the skins as you score.
- Rub in a hearty pour of olive oil into the flesh then arrange on a baking sheet flesh side up.
- Bake for 45 minutes or until soft.
- Put the garlic, tahini, chili powder, cumin, 2 tbsp of olive oil, juice of the lemons and the eggplant (skin discarded) into a food processor and give it a quick blend until you get a nice thick dip.
- Serve with our suggested carrot chips, or really anything. Veggies, chips, pita, spread it on sandwiches. And then get back to adventuring!
