Druid Gardens Caprese Salad
Ingredients
- 4 cups strawberries halved
- 3 cups fresh blackberries
- 16 oz fresh mozzarella balls
- 1 heirloom tomato diced
- 4 cups arugula
- 1 small green onion sliced with whites and greens
- 1 tbsp olive oil
- Juice from 1 lime
- ½ tsp salt
- Small handful of mint leaves chopped
- Prepared Balsamic glaze
Instructions
- In a large salad bowl combine the arugula, green onions, half (¼ tsp) of the salt, and half the lime juice. Toss them and lay them out evenly in the bowl.
- Throw all the berries, cheese, and tomato on top and garnish with mint.
- Serve to hungry adventurers, topping each plate with some lime juice, salt, and balsamic glaze!
