Cheesy Baked Smashed Potatoes - DnD Inspired Cooking

Ingredients

  • 1 lb yellow potatoes
  • 2 tbsp olive oil
  • 4 tbsp garlic powder
  • 2 tsp dried oregano
  • 2 tsp dried rosemary
  • Salt
  • Ground black pepper
  • 4 tbsp butter melted
  • ¾ c. shredded mozzarella
  • ¼ c. grated Parmesan
  • 1 large yellow onion chopped
  • 3 tbsp olive oil
  • 2 tbsp dried green onions

Instructions

  • Preheat your oven to 425°F (220°C). In a large pot over a hot cooking fire or stove, throw in your potatoes covered with water and pour in some generous salt. Bring to a boil and cook for 15 minutes, then drain.
  • Throw the potatoes into a big bowl, add a splash of olive oil, then toss in the garlic powder, oregano, rosemary, salt, and pepper. Toss the potatoes around in the spices to evenly coat.
  • Grease a large baking sheet, then place the potatoes evenly on it. Use the bottom of a mason jar or other flat surface to gently smash the potatoes roughly flat. Drizzle a bit of melted butter on top of each, then sprinkle with cheese. Bake for 20 minutes.
  • While the potatoes are baking, fry onions over a high cooking fire or stove in olive oil and salt. If you'd like to caramelize them, then reduce the heat and let them simmer, stirring occasionally, until your desired doneness is reached.
  • Once the potatoes are done, spoon some onions and green onions onto each before you serve to your hungry Dungeons and Dragons party!
