A wine-infused vegan pasta slathered in a delicious pesto and veggies, reminiscent of charcuterie and wine at the famous Corvo Bianco vineyard in the lands of Toussaint in The Witcher 3!
1lb.wine-infused pastasee note for where we got ours
½cupdry basil
⅓cupsun-dried tomatoes
¼cuppitted green olives
2tbspnutritional yeast
2clovesgarlic
1tspsalt
½tspblack pepper
1tspcrushed red pepper
⅓cupolive oil
1head broccoli
12ozshiitake mushrooms
2tbsptruffle oil

Instructions
Cook the pasta according to the instructions and save 1 cup of the pasta water before draining. Place the drained pasta back in the pot and coat with a bit of olive oil to prevent sticking.
Combine the basil, tomatoes, olives, yeast, garlic, salt, pepper, red pepper in a food processor and blend, gradually introducing the olive oil.
Sautee the florets of the brocolli head and mushrooms in the truffle oil.
Pour the pesto into the pasta, gradually mixing in the saved pasta water until the sauce reaches your desired consistency. Then add the sauteed vegetables.
Serve to a party of hungry Witchers before their next contract.

We got our red wine pasta noodles from Pasta Perfetta, we aren't sponsored by them but love their stuff! If you can't find any wine-infused pasta, feel free to simmer some red wine into the pesto and get creative with adding in some more flavor. This pasta was unique and delicious, and definitely deserving of the name of such a legendary vineyard. We love the Witcher 3, and Toussaint is a fantastical place that every adventurer needs to spend more time in!
