1cupegg whites
1egg
salt and pepperto taste
4ozlump crab meatwe used imitation to reduce cost, but real meat would offer better nutrition
2tbspparsleychopped
2tbspgrated parmesan

Stir the egg, egg whites, salt, and pepper well while your skillet is heating to medium-high over your cooking fire or stove
Pour the egg mix in and let settle for 2 minutes or so, or until the very edges start to solidify.
Lay the crab meat and parsley on one half of the omelette and let cook another 2 minutes or so until the center starts to solidify.
Add the cheese in an even layer over the crab and continue to cook until the whole omelette releases from the skillet and can shift around freely.
Top with 2 tbsp of our Everhearth Inn Homemade Remoulade, then fold the half of the egg that doesn't have toppings over the toppings.
Cook for 1 more minute, then transfer to a plate. Top with another tbsp of remoulade and serve to a hungry adventurer!
