Fry your bacon in the skillet until done to your liking. Remove and set on a paper towel and wipe out most of the grease form your skillet.
Fill your pot with about 4 inches of water and begin to heat it to a boil while you proceed with the rest of the recipe.
Pour the pancake batter into your skillet and cook according to the directions. We used enough batter to make a pancake roughly the size of our whole skillet so we could just stack everything on top and serve from the skillet itself.
Once your water is boiling, reduce the heat to low. Crack your eggs over a small bowl into your slotted ladle or sieve, draining the thin whites through into the bowl. Add the vinegar to your pot of water and sitr quickly, creating a vortex. Continue stirring while your plop your eggs (without the thin whites) into the center of the vortex. The vinegar and vortex should keep the eggs in a roughly tight form. After about 30 seconds of stirring you can stop and let them continue to cook for 3 total minutes in the water. While its cooking, do the next quick steps.
Spread the pepper jelly on the pancake, then top with the fried chicken and bacon.
Remove your eggs from the water once they hit the 3 minute mark and set them gently on the pile of food. Top with syrup, hollandaise, and green onions.
